
Homemade peanut butter
Maya NestorovPeanut butter is delicious on sandwiches, in cookies, on apples and smoothies and is very easy to make at home, but it does require a powerful food processor or blender.
This is what you need:
- 500g peanuts
- 1 tbsp coconut oil
- 1.5 teaspoons honey
- 0.5 tsp salt
- 2 tsp
Here's how:
1. Set the oven to 175° fan-forced. Spread the peanuts on a baking sheet lined with baking paper. Dry/roast in the middle of the oven for 10–20 minutes, the longer time for toasted butter. Open the oven door and let out steam. They should be completely dry and the roasting should have given them a slightly darker, roasted color. Let cool.
2. Place the peanuts in a food processor, using a blender or food processor with a high-powered motor. Save a few tablespoons to chop for a more “crunchy” butter. Blend the nuts, stopping the motor from time to time and scraping down the nut mass from the edge. After about 5 minutes, the butter will start to clump together into a ball, and then it will become creamy and warm from the friction. Mix in the salt and coconut oil or rapeseed oil. Rapeseed oil makes for a softer butter, especially when chilled. Blend for about 30 seconds.
3. Add any flavorings and blend for 10–30 seconds. Add chopped nuts if desired. Fill the butter into well-cleaned jars. Store in the refrigerator.
