
Raspberry Cheesecake with Red Berry Powder

Base:
200 g biscuits
100 g melted butter
Blend the biscuits until finely ground. Add melted butter and combine. Transfer the mixture to a round pan and refrigerate.
Lime filling:
500 g skyr
1-1.5 limes juice
2-4 tbsp maple syrup
2 tablespoons Collagen powder
2 tsp gelatin + 50 ml cold water
Combine gelatin and cold water. Bring to a boil and mix well. Set aside. Mix skyr, lemon and sugar. Add gelatin and combine. Pour mixture into the pan over the bottom. Refrigerate for 3 hours.
Raspberry & Red Berry Powder:
2 tbsp Red Berry Powder
500 g skyr
2-4 tbsp maple syrup
150 g raspberries (mixed and strained)
2 tsp gelatin + 50 ml cold water
Follow the instructions for the lime filling. Place in the refrigerator 3-4 hours before it is ready. Top with Red Berry Powder, berries and enjoy!
