
Juicy carrot bread with high nutritional content
Maya NestorovCould be the juiciest and tastiest carrot bread ever! We want to make it easy for you to add Nordic Superfood to your everyday life and thereby get more nutrition and maintain good health. That's why we've made this recipe for you.
This is a real "take-what-you-have-in-the-pantry" bread that we think will easily become your favorite recipe.
The base is as follows:
3 dl wheat flour (alternatively gluten-free flour)
2 dl coarse graham flour (replace with cornmeal for a gluten-free alternative)
3 dl oatmeal
5 dl skim milk (alternatively plant-based, e.g. soy yogurt)
3 teaspoons baking powder
1 dl dark syrup
dried fruit, in this case mango in pieces
nuts, here we chose hazelnuts
1 cup sunflower seeds
1 cup pumpkin seeds
1 dl coconut flakes
2 dl grated carrots
2 tbsp YELLOW sea buckthorn rosehip cloudberry
flake salt
Mix everything in a large bowl. Grease any mold with coconut oil and "bread" with coconut flakes. Sprinkle with e.g. pumpkin seeds, chia seeds, YELLOW and flake salt.
Bake on low heat for a long time, 150 degrees for about 90 minutes in a fan oven is a good measure. Keep an eye on it and use a skewer to see when the batter is no longer sticky.
Remove the bread from the mold and let it cool slightly, serve with homemade hummus topped with GREEN kale, stinging nettle, and mint.
