
Gluten-free blue crumb pie
Linda MyrbergGluten-free blue crumb pie for a quick coffee break! The whole family's favorite.
Cover the bottom of a regular-sized pan with frozen blueberries.
Mix with 2 tablespoons BLUE blueberries, aronia, black currants and
1/2 tsp potato flour. (You can drizzle a little honey over it if you like).
Mix in a bowl:
1 dl gluten-free oatmeal that you have mixed into a flour (it is enough to "pulse" 2 times in your blender).
1 cup whole gluten-free oatmeal
1 cup almond flour
1 dl coconut flakes
2 tablespoons sugar
125g butter
When everything is mixed to a crumbly consistency, stir in a pinch of flaked salt.
Sprinkle the mix over the superberry mixture and bake for about 20-30 minutes at 175 degrees. Keep an eye on it. (Tip! It is a good idea to turn off the oven after 20 minutes and let the pie finish in the after-heat mode and then cool in the oven if you have time).
Serve with a berry tea and stir a tablespoon of Collagen Premium+ into your custard. Guaranteed to be a cozy berry feast with lovely blue mouths!
