
Christmas Rawfood Balls

Raw food balls with Nordic Superfood powder of your choice, e.g. with RED, (lingonberries, cranberries, red currants)
Ground almond flour (aka Chufa or Tigernuts) is a good option if you want to make the balls nut-free, but you can also use almonds, cashews or hazelnuts. If you use whole nuts, however, you should mix/chop them yourself first.
Ingredients (for 10-12 pieces)
60g ground almond flour (or nuts of your choice such as cashews/hazelnuts)
1.5 tbsp Cocoa nibs
1 tbsp Coconut Oil/Ghee
15g melted Cocoa Butter
15g melted Cocoa paste
130g Medjool Dates (approx. 12pcs)
3 tbsp Cocoa
2tsp Honey
1tsp Vanilla powder
1/2 tsp Sea salt
1 tsp dried Ginger
Berry powder to roll the balls in
Do this:
Place the dates in hot water for a few minutes. Then peel off the skin and remove the seeds. Melt the cocoa butter, cocoa paste and coconut oil over a water bath. Mix the dates with all the dry ingredients to a rough dough in a powerful mixer. Add the fat and mix again until you get a smooth dough. Shape into 10-12 even-sized balls. Roll the balls in berry powder. Store the balls in the refrigerator.
