
Blackcurrant & cashew ice cream
Linda Myrberg1.5 dl cashews, soaked for 6 hours (or overnight) and drained
1/2 cup water
6 tbsp maple syrup
2 tbsp black currant juice
1 tbsp fresh lemon juice
A few blackberries to decorate with
Decorate with blackberries. Blend all ingredients in a blender until super smooth. Pour the batter into the molds, insert a popsicle stick into each and freeze for at least 4-5 hours. Enjoy!
