
Superfood Muffins
Linda MyrbergJuicy & delicious SUPERFOOD muffins with blue berries
- gluten, white sugar.
+ nutrients, antioxidants.
For about 12 superfood muffins you will need:
1.5 tbsp BLUE - blueberries, black currants, aronia
150 g butter/ghee/coconut oil
2 eggs
1.5 dl birch sugar or coconut sugar
3 dl almond flour
1 cup coconut flour
1 tsp vanilla powder
1.5 dl almond milk or oat milk
0.5- 1 package blueberries
1 teaspoon baking powder
A pinch of sea salt
0.5-1 dl oatmeal to top with
Do this:
- Set the oven to 200 g.
- Mix butter and brown sugar with an electric whisk. Mix in one egg at a time and whisk around.
- Mix in the other ingredients except blueberries and oatmeal.
- Pour in blueberries and swirl gently with a spoon.
- Scoop the batter into muffin tins and top with some oatmeal and sea salt.
- Place in the oven for about 15-20 minutes or until nicely browned. Let cool for a while before eating.
- Sure to enjoy!
It freezes well, perfect to be able to take out and serve this summer!
