
Raw gingerbread balls with RED
Linda MyrbergDeliciously Christmassy rawfood balls with a taste of gingerbread and tart lingonberries. Perfect for mulled wine mingling or Christmas coffee. Completely free of sugar, lactose or gluten.
Ingredients:
Nordic Superfood - RED Berry Powder
1 cup cashew nuts
1 cup hazelnuts (almonds work too)
1 dl coarse oatmeal
10 dates
1 tbsp neutral coconut oil
1 pinch of salt
1/2 tsp vanilla powder
1 tsp gingerbread spice
2 tbsp cocoa powder
1 - 2 tablespoons oat drink or water/milk
Do this:
Place the dates in a bowl, pour hot water over them and let them soak for a few minutes. Then remove the skin and pit the dates. Mix the nuts, oatmeal and spices into a fine flour. Add the dates, coconut oil and liquid. Place the dough in the fridge for a while to make it easier to form even, nice balls. Form 12-15 even balls, roll in RED berry powder. Enjoy!
