
Blue Meringues
Linda MyrbergThe recipe yields about 20 small meringues.
Meringue:
2 egg whites
125g sugar
1 tsp lemon vinegar
3 tsp Blue berry powder - blueberries, aronia, black currants
Do this:
1. Set the oven to 150 degrees hot air.
2. Beat the egg whites until they start to foam. Then add the sugar a little at a time while beating.
3. Add lemon vinegar and beat until the mixture is glossy and forms stiff peaks.
4. Sift in the berry powder and fold it in.
5. Spread the meringue over a baking sheet covered with baking paper. Top with a little extra berry powder or dried flowers if you like.
6. Set the oven to 100 degrees hot air when you put the meringues in. Let them stand for 45-60 minutes before opening the oven door and letting them cool in the oven.
Store at room temperature.
